  • What to do you like to teach in this class?

“I teach two different culinary classes; I have a culinary class, it’s like an intro to the culinary world and then I have a culinary two class, that’s where I run a student run café, where they make expresso drinks, and pastry islands and breakfast burritos. They have to pass the first year and then they can continue on the second one. They learn about profitability, cost analysis and costumer relation and basically how to run a cafe. It’s a great opportunity to get work experience as they are put into a real world experience where they are running a café. Extremely popular that we serve from the cafe are our breakfast burritos. We make those fresh everyday and those are like made to order so who ever, you know, orders that day, we make them that day and we also deliver them to the teacher or staff members within 15 minutes. So we are very busy!!”

  • What do you like most of this class?

“I like how the students can learn by doing so in this class they learn about different techniques or methods through notes and lectures and then they actually get to experience what they’ve learned in their lab and then they actually can experiment about that technique and method.”

  • Are there some new recipes you would like to share?

“I start at the beginning of the year with simple recipes and then, as the year goes on, we do things that have a little more of technique or methods that you need to learn in order to be successful. We do lots of different variety of things in here!”

How to make a delicious Breakfast Burrito! Yummy

Ingredients

8 slices bacon

1 (16-oz.) package frozen hash browns

8 large eggs

1/3 c. milk

4 tbsp. butter

Kosher salt

Freshly ground black pepper

4 large flour tortillas

1/2 c. shredded cheddar

1 ripe avocado, sliced

Hot sauce, for serving

Directions

  1. In a large skillet over medium heat, cook bacon, working in batches if necessary, until crispy, about 8 minutes per batch. Drain on a paper towel-lined plate and pour off half the fat.
  2. Cook hash browns according to package directions in bacon fat and transfer to a plate.

3. In a medium bowl, whisk together eggs and milk. Wipe out skillet, place over medium heat, and melt butter. When butter is just starting to foam, reduce heat to medium-low and add beaten eggs. Using a rubber spatula, stir every occasionally until soft curds form. Season with salt and pepper.

4. Assemble burritos: In the center of each tortilla, layer hash browns, scrambled eggs, cheese, two slices of bacon, and sliced avocado. Fold in the two sides and roll up tightly. Serve with hot sauce.

And then ENJOY!!
